Understanding some of the basics of food allergy can enable food service workers to address customer questions and identify potentially life-threatening situations. To help further these objectives, the International Food Information Council (IFIC) Foundation in cooperation with the American Academy of Allergy, Asthma and Immunology, the Food Allergy Network and the National Restaurant Association developed a food allergy poster for food service workers.
The poster, written in both English and Spanish, describes "what you need to know," "the most common food allergens," "symptoms of allergic reactions," and "what you need to do," when customers have questions or are experiencing an allergic reaction to food.
With clear text and widely recognized graphics, the poster will help food service workers answer basic questions about food and recipe ingredients, identify the characteristics of food allergy and learn how to get help in the event of an allergic reaction.
"This poster communicates the essentials on food allergy from milk, eggs, fish or shellfish, wheat, soy products, peanuts, or nuts, and what to do if consumers have an allergic reaction," noted Anne Muñoz-Furlong, president and founder of the Food Allergy Network. "This tool will help food service workers be better prepared to prevent or identify food allergic reactions. It is a must for all restaurants and food service establishments."
The colorful 11"x17" poster is printed on laminated stock. Single copies are available for $2.50 plus shipping and handling.
